Chef Andre's Halcyon Days
"Over 150 recipes from the galley of the Bermudan ketch, SY Halcyon"
This cookery book and travelogue virtually burst out of Andre Daniels' heart and head following his season as the Chef on board in 2007. His experiences of creating menus, shopping when and where he could and delivering fine dining from the cramped galley of a 1920s yacht, inspired him to set them down on paper and share his thoughts with you. Andre has collected together over 150 recipes covering breakfasts, lunches and three course dinners as well as ‘passage' food. The book is illustrated with over 130 photographs, mostly from the lens of professional shipping photographer Roger Paice, capturing and projecting some of the atmosphere that accompanied the great food that was served during Halcyon's summer cruise in 2007.
Roger Paice is both a professional photographer and a marine electrical engineer. In recent years he has been able to combine these two aspects of his career by developing a portfolio of exceptional images of boats, ships and seafarers in all their moods and guises. He supplies photographs to Lloyd's List and other shipping and yachting magazines and the publications of Milford Haven Port Authority. He is building a set of images for the library of the classic yacht Halcyon and was therefore a natural choice for the photoshoot of this book. Roger has lived in Pembrokeshire for nearly 50 years and his enthusiasm for his area and his subjects coupled with the verve he brings to his work are clearly expressed in his images.
